These fatty acids are termed ‘essential fatty acids’, as the body is unable to manufacture them and must absorb them from the diet. Examples of essential fatty acids include omega-3 fatty acids, which are found in fish, and linoleic acid, which is found in many vegetable oils.

Saturated fatty acids have been linked to health problems, such as raised cholesterol levels, which can increase the risk of cardiovascular disease. On the other hand, unsaturated fatty acids are thought to have a protective effect on health and may reduce cholesterol levels. Omega-3 fatty acids are thought to be particularly beneficial and are thought to help protect against heart disease, stroke, diabetes and some cancers.
